The story begins in 1923, when a few winegrowers, led by Abbé Balitrand, joined forces to face the economic difficulties of the time and founded a cellar cooperative in the heart of the Chablis vineyard in Burgundy for the purpose of selling their wines. Until the mid-1950s, the members supplied their production to La Chablisienne, which was then responsible for blending and selling mainly to wholesalers. To go even further and stamp its style, La Chablisienne then decided to bring in the harvests in the form of must, a feature that would be the hallmark of the house and allow complete control over the winemaking. Winemakers and technicians, in constant exchange, establish the link between the quality of the musts and the plots from which the grapes come, thus developing the technical guidelines to be given.
